Happy Chocolate Chip Day!

Today is National Chocolate Chip Day! What better holiday to have on a Friday? This may be my most favorite holiday ever.  Why is this not a federal holiday?

Its no secret here that I love me some cookies.  Typically I make all kinds of cookies around Christmas time and get real creative with cookie cutters, icing, etcetc.  But once a month for the rest of the year I make chocolate chip cookies.  My church has a hospitality team which I am a member of and my assignment is to make my specialty chocolate chip cookies once a month for our newcomer reception room.

Since today is National Chocolate Chip Day, I decided to include my special recipe for all to see.  Secret Ingredient Included!

These cookies would be nothing special at all without the stealth addition of 1 small box of vanilla instant pudding powder.  Somehow this makes the cookies soft, gooey and to die for in general.

The BEST Chocolate Chip Cookie Recipe EVER

2 1/4 cup flour

3/4 cup brown sugar – packed

1/4 cup granulated sugar

1 tsp banking powder

1 tsp salt

1 egg

1 stick real butter butter, melted

1 tsp vanilla extract (eyeball it)

1 small box of JELL-O instant pudding powder

Instructions:

Preheat oven to 375

Mix flour, salt, and banking powder in one bowl.

Mix eggs, sugar, butter in a separate, larger bowl.  Beat with a hand mixer till smooth.

Add vanilla to the wet ingredients.  Then mix in the vanilla pudding powder.

Now, slowly add the flour mixture to the wet ingredients.  Little by little to ensure a smooth batter.

Once all of the flour is combined with the wet ingredients, add 1 lb of your favorite chocolate chips and stir to combine with a spatula.

(You may also add chopped nuts of thats how you roll. )

Scoop dough by the spoonful onto cookie sheets and bake at 375 for 8-10 minutes.

These cookies will rock your face off, I promise!

Tip:  I use a Silpat Cookie Sheet Liner (or “baking mat”) for even heat distribution and a perfectly browned bottom.
